Chef De Partie

The Wharf is looking for a Chef De Partie to be a part of the team that brings to life this fabulous riverside restaurant.  A Chef De Partie will excel at cooking in this busy restaurant, while executing each dish’s design with excellence.  This position actively embodies and inspires the values of  Hospitality, Excellence, and Integrity.  Service periods will include Lunch, Brunch, and Dinner.

Responsibilities

  • Able to execute and maintain the preparations, recipes, mise-en-place, and service of the assigned section while being mindful of others.
  • Have a knowledge base regarding, and be able to demonstrate classic cooking techniques including, but not limited to; roasting, grilling, baking, frying, sautéing, braising, and larder.
  • Able to demonstrate proper knife-skills and work space tidiness in a fast-paced environment. 
  • Maintain mental athleticism and coordination with other stations for proper timings in the service.
  • Strong communication skills to convey needs and complete each task in a professional manner.
  • Maintain and ensure proper plate presentation and cleanliness for each dish.                 
  • Stay up to date on menu changes for all Brunch, Lunch, Dinner and Dessert shifts.
  • Set up station according to Chef’s/sous chefs guidelines.
  • Follows recipes, portion controls, pars, and presentation specifics as set by the Chef/sous chef.
  • Restocks items as needed throughout shift.
  • Keeps a clean, safe, organised work station.
  • Uses/cleans/maintains all equipment in the kitchen properly.
  • Assists with clean down and organisation of kitchen, refrigeration and storage areas, etc.
  • Performs additional tasks as requested by the Chef or Sous Chef.
  • Conforms to current health and safety practices.

Skills

  • Sound understanding of professional cooking.
  • Knife handling skills.
  • Following recipes without direct supervision.
  • Sound kitchen etiquette and safety.
  • Ability to communicate clearly and professionally with colleagues.

Barman

The Wharf is looking for an experienced bartender / mixologist to be part of our Bar team. Our next bartender / mixologist needs to have proactive energy, a positive can-do attitude and friendly personality alongside all the other skills that make you a top employee with a great ability to interact with customers. 

Responsibilities

  • To monitor the quality of beverage service to ensure a consistently high standard.
  • Mixing a variety of different cocktails.
  • Creating new and innovative cocktails and drinks.
  • To prepare and keep all the service stations and bar fully stocked for each service period.
  • To be fast and efficient in the service for our guests.
  • To take orders for drink and food in a friendly and professional manner to the standard required.
  • To ensure correct bills are given to guests, or upon guests declining further service.

Skills

  • Have at least 1-2 years’ experience working in a bar.
  • Previous experience making cocktails and drinks essential.
  • Must have an outgoing, confident and lively personality.
  • Be smart and well presented at all times.
  • Must have a good understanding on delivering exceptional customer service.
  • Must have the ability to maintain professional self-control when dealing with uncommon and challenging circumstances.
  • You must have excellent communication skills.
  • You should be focussed on delivering excellent customer service to our employees and our members.
  • You must have the ability to interact successfully at several social levels and across diverse values.

Responsibilities

  • Delivering premium hospitality, ensuring that all customers’ expectations are met through an exceptional customer service experience.
  • Interacting and building relationships with our customers.
  • Ensuring the service runs smoothly and optimising capacity.
  • Delivering food and beverage.
  • Clearing in and resetting the restaurants.
  • Up-selling of wines and food to our guests
  • Reception duties including greeting customers and assigning to tables.

Skills
